It's already public ;)

If there was a source IP address in the headers and it was that of a VPN/Proxy/Tor you would very likely not be able to find the user's real IP address.

Unfortunately, the headers do not include the sender's IP address.

I can say, with certainty, that it's a scam.

SMTP 550 errors usually mean that the email address doesn't exist.

I'd work to resolve the issue with your mail server being listed at backscatterer, but that's likely not the issue.

If you would like to post the IP address of the mail server or a more detailed bounce message we can look at it.

The vast majority of mail sent through Gmail servers does not include the sender's IP address.

That's only part of an IPv6 address. The analytics tools that you are looking at may be cutting off part the IP address.

At least part of the 2600:8801:8700 block of IP addresses belong to Cox Communications.

Yes, it's somewhat normal as some of the listings have to do with the rDNS/PTR record for the mail server. Ultimately you'd want to check the listings for the IP address to see WHY it's listed. Many can be easily and quickly resolved with proper configuration.
