216.57.79.230 is the IP address of a mail server, not the recipient -- unless they are remote into that machine to read their mail.
It's possible that the mail server was "clicking on links" to see if they are malicious.

You'll want to work with AWS to configure non-generic matching forward and reverse DNS for the mail server's IP address. For example 10.0.0.0 --> mail.example.com --> 10.0.0.0.
Once that is set up you can visit https://spfbl.net/en/delist/ to check the IP and request removal from SPFBL.
