Static IP assignment for embedded servers

My single chip web server (Microchip PIC18F97J60) is on a evaluation board (PICDEM.net2) which defaults to DHCP IP assignment. Should the user prefer a static IP, there is the classic boot issue: not knowing the static address, no communication can be established to determine or change it via the TCP/IP port.

The method used by Microchip is a second port, RS232 to a local PC and hyperterminal. This is not a practical solution for a customer, as RS232 ports are impossible to find on laptops. A USB to RS232 dongle requires special drivers, also unfriendly. One solution I saw is to assign a default address, 192.168.1.199 but this may cause conflicts. We are thinking good old hardware jumpers, but this is not without objection as the user would need to open the case an manipulate 32 jumpers or 4 hex rotary switches. This seems like a common problem but I haven't seen a forum on the topic.
